at Bali’s newest 5 star hotel, the Novotel Nusa
Dua Golf Resort, about the challenges and successes
of serving the first meals while still unpacking boxes.
“I have now been involved in a number of
start-ups of major hotels. Working with people who are
flexible, and ready to innovate, is crucial. As is keeping
good communication and understanding between all staff,
not just in the kitchen, but across all departments
and functions in the hotel,” says Bill.
“We are very lucky at Novotel Nusa Dua because
we have a very good team here. From top management to
kitchen hands, everyone worked fantastically well in
the months before opening, and in the critical weeks
as guests started to arrive”.
